What Defines True Cinnamon

True cinnamon refers to Ceylon cinnamon, a variety native to Sri Lanka and valued for its delicate aroma, light colour, and naturally sweet flavour.

Unlike cassia, which is thicker, darker, and more pungent, Ceylon cinnamon is finer in texture and milder on the palate. Its layered structure and gentle warmth come from traditional harvesting and processing methods that have been refined over generations.

This distinction in origin and method is what sets true Ceylon cinnamon apart from other cinnamon varieties found around the world.

Scientific reviews suggest that cassia cinnamon can contain roughly 30–100 times more coumarin than Ceylon cinnamon, depending on the source and processing method.
